Our upcoming bottlings

We recently pulled bungs on casks 5921, 4385, 4384, 4407 and 4406 which we've had maturing at Carlow Brewing Co. These consisted of a mix of single malt and single grains in first fill ex bourbon casks and a single 225L oloroso sherry seasoned American oak cask with our 12 year old blend inside. Samples have gone to John Cashman (ex Beam and Cooley) for nosing, tasting notes and blending.

These casks were moved to Carlow Brewing in May 2019 and have been maturing there since. The 225L American oak cask was made at World Cooperate in May 2012 in Missouri USA and then sold to Carmel Road Winery in Monterey California where we're informed by them that it was more than likely filled with Chardonnay. It then found its way to Coastland cooperage in Maine USA and from there made its way across the Atlantic to Great Northern Distillery where it was seasoned with oloroso sherry and from whom we purchased it. 

225L American Oak Cask

Now at its fifth home in Carlow Brewing Co, we're aiming to bottle this in the coming months as a single cask expression. The liquid consists of 2008 grain and 2002 malt from two of Ireland's best known distilleries and was blended together in May 2019. Filled at 61.8% ABV we're had it tested on an Anton Paar in the past week at its now at 61.3% ABV. Our view is that it's a really decent dram with everything you'd expect from a blend of that age finished in oloroso sherry. We'll defer to John Cashman on this and we will post the tasting notes when we have them to hand.
