The Process

  We work with a small number of Irish distilleries to select only the best whiskey spirit for maturation. Generally we look for grain and malt whiskey spirit aged in either ex bourbon or oloroso sherry casks, however from time to time we use ex port and ex rum casks.
We sample from the casks regularly to test for quality and maturation progress. Part of this process is regularly putting blends together from various casks. It is only when we are happy with the progress of the whiskey that we commit to a blend ratio.
Once the blend ratio is settled on, we select the casks, syphon into a blending vessel, filter and then leave them to marry together for a period.
Once the whiskies have fully married together we then cut back (dilute) to the drinking ABV with good clear Carlow water.
