We are working with four final year students from IT Carlow on our latest bottlings. They will help us blend and cut casks we have maturing at Carlow Brewing Co and then help us bottle the final blend. Check out their profiles here.

Kira Kamateras from Bunclody, Ben Hodgins from Clonakilty, Paul McNamara from Abbeyleix and Anthony Gannon from Tullamore, alongside their course lecturer Dr. Blaise Nic Phiarais, are collaborating with the Flying Tumbler team on a project that will give the students direct hands-on experience in the core areas of gauging, blending and bottling Irish whiskey.

The brand name comes from the Irish Flying Tumbler, which is a pigeon with a natural beacon for home. It can fly for days from anywhere in the world but always has the north star of home to reach for.

The first step in our blending process is our Cask Selection. Here, we review, sample and select casks from our stocks that have whiskey spirit which has reached the level of maturity and complexity we demand.
